An enzyme complex derived from the fermentation of a selected strain. Hydrolizes or degrades cellulosic materials from a wide variety of sources depending on enzyme dosage, reaction conditions and the type of material being treated. Besides a high cellulase activity (EC 3.2.1.4) the preparation exhibits hemicellulase and amylase activity. Another feature is its macerase activity which is capable of cell wall decomposition.
Temperature optimum: 50 - 60 °C
pH-optimum: pH 4 - 5
Unit definition: 1 U catalyzes the liberation of 1 µmole glucose from sodium carboxymethyl cellulose per minute at 40 °C, pH 4.5; glucose determined with alkaline copper reagent (1).
Extraneous activities: contains α-amylase, pectinase, protease and hemicellulase.
