from dimethyl casein per minute at 25 °C, pH 7.0 expressed in terms of newly
formed terminal amino groups (determined with TNBS) (2). Activity in other units: 1200 GDU units/g (1 GDU unit yields the
equivalent of 1 mg amino nitrogen from gelatin in 20 min. at 45 °C, pH 4.5).
